2014: 年饼 : 鸡仔饼 Chicken Biscuit


好爱薄薄脆脆香香的“鸡仔饼”。家乡在Genting Highland山脚下。总会假日被姐姐老早扯上车子去到Ipoh吃美味鸭腿面!当然少不了“鸡仔饼”!去年看了Crystal家的“香脆鸡仔饼”自己也有改良一番。味道独特,非常香脆!儿子竟然如此喜爱,一个三岁孩子捧着吃可以不知不觉间吃完一罐!





粉类

湿的材料

加入鸡蛋

不能用力揉捏只是用手指搓散

放进胶袋

绑紧放进密封盒冷藏一天或三小时

满满的芝麻 ( 看见花朵赶快拍摄 )

铺油纸不必一直放油在烤盘

烤好的“鸡仔饼”



食谱取自~Kathrine Kwa
香脆鸡仔饼

材料:
A)
300g普通面粉
1小匙双倍发粉
90g糖粉
1/2小匙盐
1/2小匙 胡椒粉
1/2小匙五香粉
1/2汤匙蒜茸
100g冬瓜糖(打碎)
80g白芝麻
1/4小匙臭粉


B)
1粒A蛋、
1汤匙麦芽糖
2块南乳
1汤匙南乳汁
100ml食油


做法:
1)材料B先拌均匀。

2)加入材料A拌成软团。
3)取一小面团,放在一张塑胶袋中间擀薄成小圆片,排在涂上油的烤盘。
4)以150度烤10分钟至熟。



自己改过的食谱

材料:
A)
300g普通面粉 ( 过筛 )
1小匙双倍发粉
90g糖粉 ( 60g )
1/2小匙盐
1/2小匙 胡椒粉
1/2小匙五香粉
1/2汤匙蒜茸 ( 盅烂 )
100g冬瓜糖( 130g 盅烂 )
80g白芝麻 ( 50过白芝麻 + 50g黑芝麻 )
1/4小匙臭粉 ( 减半 )

B)
1粒A蛋
1汤匙麦芽糖
2块南乳
1汤匙南乳汁
100ml食油

做法:
1)先将麦芽糖舀出放入大碗加入南乳汁充分搅拌至麦芽糖溶化。Sara是烤饼干时将装入麦芽糖和南乳汁的钢碗放在烤箱上面。预热后麦芽糖很快溶化。加入压碎的南乳搅拌均匀才放入食油、鸡蛋、糖粉( 过筛 )、冬瓜糖和蒜米茸搅拌均匀。
2)面粉过筛,加入烤香的黑白芝麻双倍发粉和其它的香料。拌均匀。
3)将湿的材料逐步倒进粉类不能够用力搓揉。放入冷藏三小时后粉团吸取了湿的材料就成团不会起筋。饼干才会脆脆的。
4)取一小面团,放在一张塑胶袋中间擀薄平用刀子割去四边行长方。将塑胶袋倒反将面皮排在铺了油纸的烤盘(可以不必在烤盘加油了。
5)以120度烤8分钟至熟。( 个人烤箱不一样。Sara烤箱很热放150度焦了 )。

Tips: 

1 )冬瓜糖、蒜米盅到最细和湿的材料混合饼干会更薄。
2 ) 杆面棍杆面团不要重复面团不起筋,饼干更脆口。
3 )面团隔天才取出饼干较入味。
