Strudel Apple

Ingredients
For STRUDEL
2 tbsp (  30g   ) apple juice
3 tbsp ( 45ml )  cranberries
1/4 tsp ground cinnamon
1/3 cup brown sugar
1/2 cup ( 110g ) unsalted meld butter
11/2 cups fresh bread crumbs

strudel dough ( recepe below )
1/2 cup coarsely chopped walnuts
900g green smith apple

For the strudel DOUGH
11/3 cups flour
1/8 tsp salt
1 egg * original recepi ( 7 tbsp water )
2 tbsp vegetable oil
1/2 tsp cider vinegar

Method : -

For the apple strudel
1. mix the rum & cranberries in a bowl . Mix the cinnamon and sugar in another bowl . Heat 3 tbsp of the melt butter in a large skillet over medium-high .Add thebreadcrumbs and cook until golden & toasted . Let it cool completely .
2. Put the rack in the upper third of the oven and preheat the oven to 200c .Line a large baking sheet with baking paper . Make the strudel dough as below ( method )

For the Strudel Dough
1. Combine the flour and salt in a stand mixer . Mix the water  ( egg ), oil and vinegar in a measuring cup . Add mixture to the flour with the mixer in low speed . You will get a soft dough . Make sure it is not too dry .
2. Take the dough out of the mixer and continue kneading by hand about 2-3 minutes . Shape the dough into a ball and transfer it to a plate . Oil the top of the dough ball lightly .Cover the dough tightly with plastic wrap . Allow to stand 1 or 11/2 hour . ( longer is better )

Flour welland roll it out as much as you can .
The strudel dough pull until 3 feet , will be tissue-thin by this time .

spread the walnuts on top of the dough . Mix the apples slice with cranberries , cinnamon brown sugar . spread the mixture over the walnuts .
Fold the short end of the dough onto the filling .
Lift the tablecloth at the short end of the dough so that the strudel rolls onto itself .
Brush the top with the remaining melted butter / egg wash .
Bake the strudel for 30 minutes or until goldeb brown .

食谱

一苹果内陷
30 ml 苹果汁
45克 蔓越莓  / 葡萄干
1/4 小匙 肉桂粉
80g 红糖 / 白糖
110g 融化无盐奶油
11/2 杯面包糠

二 材料
1/2 杯 盅细胡桃
5-8 个 青苹果 去籽切片

粉皮
200g 面粉
1/8 小匙 盐
100ml 水 ( 换一颗蛋)
2大匙 食油 ( 换橄榄油 )
1/2小匙 苹果醋

做法 :-
苹果用果汁浸泡备用。将一半的奶油和面包糠炒香或金黄待冷备用。肉桂粉和红糖放入小碗拌匀。

粉皮面粉和盐拌匀放入搅拌机内。 另一个一以量杯放入鸡蛋/ 水, 食油和苹果醋搅拌均匀。 倒入鸡蛋混合物的一半在面粉内开动慢性搅拌。 当搅拌还不会成团或太干就慢慢再加入蛋液。必须失使面粉成团和耳崔一样的柔软度。

去取出再用手揉捏粉团直到可以拉长或出筋的程度。面团揉圆放进密封的盒子倒入少数油或抹在面团上将盖子盖紧密。摆放一到一个班小时。

工作台上放大块的布,莎上面粉。面团取出来莎电点面粉放在布上用擀面杖干擀平然后用双手从内小心的将面皮拉长, 一直往外拉使面皮伸展。拉得越薄越好。大概会拉到三尺以外。将旁边较厚的皮剪去。
在面皮上莎上胡桃粉,加入苹果,蔓越莓,红糖等苹果料。 ( 果汁不要加入)
取一点奶油滴少量的在粉皮上就拉起布将苹果料包裹在内。旁边两边留一寸,剪去多余的粉皮,将多一寸的粉皮向下凹才不会露馅。
将包裹好的苹果strudel放入烤盘在粉皮上涂抹奶油或蛋液。 预热烤箱200/180 度 烤30分钟或金黄。 待冷才切。
